Having grown up and spent my first adult years in snowy Michigan, the change of season has a profound effect on every part of me. The longer days, the first buds pushing through, peeling off the winter layers, lightness and then the first fresh spring fruits and vegetables start to appear and then there is the spirit and energy that comes with the change in season. Here in London that means an increasing buzz around our three weekly markets – Brockley, Stoke-Newington and Victoria Park. And more specifically, its when we shift our range to brighter and lighter flavours and textures.
