Oaxaca: Mezcal ganache truffles (v)
The smoky cousin of tequila originates in the region of Mexico that also has a long history with cacao and chocolate. So, of course this is a combination that works unbelievably well.
We use a coconut cream base with this ganache so you get a light hint of coconut behind and a silky smooth texture. The melt is perfect and allows the smoky notes to slowing build. We add a touch of lime and smoked paprika to round out the experience.
